I'm a big fan of Chef John, and have never made any of his recipes I didn't like. Until now. With two tablespoons of catsup in the ground beef, and another 2 in the gravy, it made everything SWEET -- both the "steaks" and the gravy were sweet and lacking seasoning. I have loved and eaten Salisbury Steak in school cafeterias as well as TV dinners over my 73 years of life, and never encountered anything but savory flavors.

It is not a bad recipe. However, it is too mustard forward which the TV dinner did not have in it taste wise. In addition, I think ketchup in the gravy should be replaced with tomatoe paste. But don't get me wrong, this is good as is. Just different than what you expect from trying to match the tv dinner. Hey, Chef John: The TV dinner concluded with the best part-- the brownie. This was absolutely delicious! I made it exactly per the recipe. The gravy takes a while to make. One reviewer said she made it the day before. I think I'll try that next time. It made possibly the best beef gravy I have ever had. I'm going to use this gravy with a round steak and noodles.
